Making Fast, Healthy, and Delicious Meals

Russian Red Pepper Salad
Ingredients
  • 3 large red peppers (sliced)
  • 3 large tomatoes (chopped)
  • 2 gloves garlic (minced)
  • 1/2 teaspoon black pepper
  • 2 tablespoons parsley (chopped)
  • 3 tablespoons olive oil
  • 3 tablespoons ketchup
  • salt to taste

Directions
  1. Heat olive oil in a large, heavy skillet.  Add red peppers; sauté over medium heat for 6 to 8 minutes.
  2. Meanwhile, mix tomatoes, black pepper, garlic, ketchup, and salt in a large bowl.
  3. As soon as red peppers are cooked, add the tomato mixture and toss all ingredients together.
  4. Refrigirate for 30 minutes.  Garnish with parsley.
  5. Enjoy this sweet, spicy, and luscious salad!
